Of course, we should have made them immediately after Thanksgiving, because they&#8217;re better the longer they sit, but this is still plenty of tie.<\/p>\n<p>These are one of Michael&#8217;s favorite Christmas cookies, and we make a double (or even triple) back every year. <\/p>\n<p>This recipe calls for Nilla wafers, but other recipes have called for stale cake. But I never have stale cake lying around, so this works perfectly well. The recipe calls for corn syrup to hold everything together. I suppose honey might work, but I think it might change the flavor, so I&#8217;ve never fussed with the recipe.<\/p>\n<p><strong>Bourbon Balls<\/strong><\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/random_michelle\/3090834940\/\" title=\"Bourbon_balls_0001 by Random Michelle K, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm4.static.flickr.com\/3014\/3090834940_cb2b6f30b9.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"Bourbon_balls_0001\" align=\"right\" \/><\/a>1 box vanilla wafers, crushed<br \/>\n1 cup confectioners sugar<br \/>\n1 cup chopped nuts (walnuts or pecans)<br \/>\n3 tbsp corn syrup<br \/>\n1\/4 to 1\/2 cup bourbon<br \/>\n3 tbsp cocoa<br \/>\n1 tbsp espresso powder or instant coffee *<br clear=\"all\" \/><\/p>\n<p><!--more--><\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/random_michelle\/3089998783\/\" title=\"Bourbon_balls_0002 by Random Michelle K, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm4.static.flickr.com\/3014\/3089998783_124f0c0c31.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"Bourbon_balls_0002\"  align=\"right\" \/><\/a>Place dry ingredients in the mixer, and combine.<\/p>\n<p>Add corn syrup and bourbon. After a minute or two the mixture will form into a giant ball and the mixer will slow down noticeably. <\/p>\n<p>You&#8217;ll have a giant brown lump that isn&#8217;t particularly attractive.<br clear=\"all\" \/><\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/random_michelle\/3090842114\/\" title=\"Bourbon_balls_0003 by Random Michelle K, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm4.static.flickr.com\/3032\/3090842114_190bbd32c1.jpg?resize=375%2C500\" width=\"375\" height=\"500\" alt=\"Bourbon_balls_0003\"  align=\"right\" \/><\/a>Roll mixture into balls. <\/p>\n<p>Michael is using a cookie scoop here, otherwise he gets carried away and creates some cookies the size of tennis balls.<br clear=\"all\" \/><\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/random_michelle\/3090004883\/\" title=\"Bourbon_balls_0004 by Random Michelle K, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm4.static.flickr.com\/3030\/3090004883_fea329569d.jpg?resize=375%2C500\" width=\"375\" height=\"500\" alt=\"Bourbon_balls_0004\"  align=\"right\" \/><\/a>Coat individual balls in powdered sugar.<\/p>\n<p>Line a tin with waxed paper, then place bourbon balls in the tin, separating layers with waxed paper.<\/p>\n<p>Close the tin(s) and then place it (them) in a cool dry place where you can easily ignore it for several weeks. <\/p>\n<p>You may want to reroll the balls in powdered sugar before you eat them, but Michael doesn&#8217;t care how they look.<\/p>\n<p>* One year I sent Michael to the store to get instant coffee, and he came back with Sanka, and then spent weeks arguing that Sanka was the same thing as coffee. <\/p>\n<p>Mind you, Michael is the coffee drinker in the house.<br \/>\n<br clear=\"all\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The holiday season is officially upon us when we make bourbon balls.
