{"id":4004,"date":"2009-01-27T17:57:41","date_gmt":"2009-01-27T22:57:41","guid":{"rendered":"http:\/\/klishis.com\/notreally\/?p=4004"},"modified":"2009-01-27T18:02:18","modified_gmt":"2009-01-27T23:02:18","slug":"tasty-tuesday-potato-soup","status":"publish","type":"post","link":"https:\/\/klishis.com\/notreally\/archives\/4004","title":{"rendered":"Tasty Tuesday: Potato Soup"},"content":{"rendered":"<p>Kim asked, and as I just made two batches, here&#8217;s the recipe.<\/p>\n<p><strong>Potato Soup<\/strong><br \/>\n4 cups of hot broth (vegetable, chicken, or turkey)<br \/>\n4 or 5 medium red potatoes, cubed<br \/>\n1 or 2 leeks, minced<br \/>\n3 tbsp olive oil<br \/>\nkosher salt<br \/>\nfresh ground pepper<\/p>\n<p>Slice\/mince the whites of the leeks. Greens can be saved for stock. Wash the red potatoes and cube them. Do NOT peel. Potato skins are healthy and yummy. <\/p>\n<p>Heat olive oil in soup pot over medium heat. Saute leeks until soft. Add salt and pepper until it smells nice. Add potatoes and continue to saute until you&#8217;re tired of stirring. Add 4 cups of hot broth. Cook over medium heat until potatoes are kind of soft\/it starts to smell like soup.<\/p>\n<p>Puree the soup in the blender.<\/p>\n<p>Add more pepper to taste, if necessary.<\/p>\n<p>Serve with bread and butter.<\/p>\n<p>&#8212;&#8212;-<\/p>\n<p>Michael hates my recipes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Kim asked, and as I just made two batches, here&#8217;s the recipe.
