Needed something good, but relatively easy, and this hits the spot perfectly.<\/p>\n<p><strong>Homemade Oreos<\/strong> (via <a href=\"http:\/\/smittenkitchen.com\/2007\/05\/my-kingdom-for-a-glass-of-milk\/\">Smitten Kitchen<\/a>)<br \/>\nFor cookies:<br \/>\n1 1\/4 cups all-purpose flour (150 g)<br \/>\n1\/2 cup Dutch process cocoa (47 g)<br \/>\n1 teaspoon baking soda<br \/>\n1\/4 teaspoon baking powder<br \/>\n1\/4 teaspoon salt<br \/>\n1 cup sugar (200 g)<br \/>\n1\/2 cup plus 2 tablespoons butter, softened<br \/>\n1 egg<\/p>\n<p>For filling:<br \/>\n1\/4 cup butter, softened<br \/>\n1\/4 cup vegetable shortening<br \/>\n2 cups sifted confectioners\u2019 sugar<br \/>\n2 teaspoons vanilla extract <\/p>\n<p>Preheat oven to 375 F. A cookie scoop is precisely what you want here to get the cookies a relatively uniform size.<\/p>\n<p align=\"center\"><a href=\"http:\/\/www.flickr.com\/photos\/random_michelle\/3645844412\/\" title=\"oreos_0004 by Random Michelle K, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm3.static.flickr.com\/2427\/3645844412_21c48221ee.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"oreos_0004\" \/><\/a><\/p>\n<p>Bake cookies two sheets at a time, for 9 minutes (4 1\/2 minutes then rotate the sheets.)<\/p>\n<p>Allow cookies to cool on the trays for a minute or two, or they&#8217;ll become deformed when you remove them.<\/p>\n<p align=\"center\"><a href=\"http:\/\/www.flickr.com\/photos\/random_michelle\/3645042277\/\" title=\"oreos_0007 by Random Michelle K, on Flickr\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/farm3.static.flickr.com\/2477\/3645042277_062d35f4b9.jpg?resize=500%2C375\" width=\"500\" height=\"375\" alt=\"oreos_0007\" \/><\/a><\/p>\n<p>Cool the cookies, and then match for relative size and shape. <\/p>\n<p>Beat together the butter, shortening, sugar and vanilla.
