The best bakeries had a cohesive vision. You didn\u2019t want a counter selling bran muffins next to key lime tarts next to baklava next to polvorones. The menu needed to have range, but not feel chaotic\u2014 provide surprises, but not overwhelm.<\/p><\/blockquote>\n

Even the bits that aren’t about food, are about food.<\/p>\n

Corbin was a strawberry. If you had any sense at all, you took it as it was and you never questioned it. You didn\u2019t add sugar and you didn\u2019t add heat. You didn\u2019t put it in a sandwich or use it in a cake. You didn\u2019t do anything to it because it was already as absolutely, perfectly a strawberry as it would ever be. You recognized it, and were grateful for it.<\/p><\/blockquote>\n

My grandmother always said don\u2019t bake while you\u2019re angry or sad because your bitterness will flavor the bread. You should bake with love if you\u2019re baking for people you love, and they\u2019ll taste the sweetness.\u201d<\/p><\/blockquote>\n
