Tasty Tuesday: Oatmeal Cookies

It’s time for the once a semester GA meeting, so, as the one who called the meeting, I figure it’s my job to supply enticements.

Last meeting was a week after I broke my ankle, so all they got was pizza, but this time I felt up (with rest & elevate the ankle breaks) to make cookies.

Tasty Tuesday: Oatmeal Cookies

Since I have this new stove to try out, I need to make lots of different thing. Just to test it out of course. Since Grandmom can eat oatmeal cookies, I decided to riff on one of the recipes I’ve used before.

I’m not sure how I feel about the spices. I might drop the cloves next time, since they’re a very strong flavor.

Oatmeal Cookies
1/2 cup butter
1/2 cup shortening
1/2 cup sugar
1 cup dark brown sugar
2 tsp vanilla extract
3/4 tsp cinnamon
1/8 tsp cloves
1/4 tsp nutmeg
1 tsp salt
1 tsp baking soda
1 egg
6 tbsp corn syrup
2 tbsp half & half
3 cups old fashioned oats
1 1/2 cups flour
2 cups coconut
1 cup chocolate chips

Preheat oven to 375 F.

Cream butter and shortening. Add sugars and beat until light and fluffy. Add vanilla and spices, salt and baking soda and beat until well incorporated.

Add egg, corn syrup, and milk.

Add oats and flour, mixing well. Incorporate coconut and chocolate chips.

Spoon onto greased cookie sheets (or silicone sheets).

Bake 11 minutes.

Tasty Tuesday: Oatmeal Cookies with Coconut, Cranberries, and White Chocolate

This is modified from a recipe I made at Christmas (which I’d already modified from the original). Grandmom can’t eat nuts, and she’s not supposed to have many cranberries, so I had to make some substitutions. I made half the cookies without cranberries, and half with. Or maybe a little bit more than half with. Directions are for with cranberries.

Oatmeal Cookies with Coconut, White Chocolate, and Cranberries
325 F, 12 minutes
3/4 cup butter, softened
1/2 cup sugar
1/2 cup light brown sugar
1 tbsp corn syrup
1 tsp vanilla extract
1 large egg (room temperature)
1 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
1/2+ cup oats
1/2 cup dried cranberries
1/2 cup coconut
4 oz white chocolate, in chunks (I take a 4 oz bar and crush it. If you can find white chips those’d be fine.)

Beat the butter until light. Add in the sugars and continue beating until mixture is light and fluffy. Add in corn syrup and vanilla, and beat well. Beat in the egg, then add four, soda and salt.

Mix in the oats, then the coconut, then the white chocolate chunks, then the cranberries.

Scoop onto parchment paper covered cookie sheets.

Bake for 12 minutes, rotating sheets halfway through baking.

Allow cookies to cool on the sheets for a few minutes before transferring to wire racks to cool completely.
