Oatmeal Chocolate Chip Cookies
Chocolate Chip Oatmeal Cookies
2 1/4 cup rolled oats
1 1/4 cup flour
1 tsp baking soda
1 tsp salt
10 tbsp butter
6 tbsp crisco
1 cup sugar
1/2 cup brown sugar
1 egg, room temperature
2 tsp vanilla
3 cups chocolate chips (I used a combo bitterweet & semisweet)
pink sea salt
Preheat oven to 375.
In a large bowl, mix well the oats, flour, soda and salt.
In the mixer, beat butter and shortening until soft. Add sugar and beat again.
Scrape down the sides of the bowl and then add in oat flour mixture, then the chocolate chips. Mix just until combined.
Using a 80 cookies scoop, place dough on parchment covered cookie sheets ~10 per half sheet. Sprinkle with salt.
Bake 16 minutes, rotating sheets halfway through.
Cool for several minutes on sheet, to allow cookies to firm up, before transferring to cooling rack.
